Eat Well For Less? has finally returned to our screens after a two-week hiatus from the new series!

And episode 2 (Wednesday, June 12th) proved to be worth the wait as viewers saw one of their best recipes to date.

What is in the udon noodle soup?

This quick and easy noodle soup can be whipped up in just twenty minutes making it a perfect weekday meal.

It uses a variety of vegetables, spices and thick udon noodles making it both hearty and healthy.

The recipe from the episode uses carrots, sugar snap peas, spring onions, chillis and beansprouts. However, we think you can experiment with your veg of choice… Other vegetables that would be tasty in the soup could be spinach, cabbage or any other leafy green.

Also used in the recipe is white miso paste, pickled ginger, vegetable stock, rice wine vinegar and green chilli paste. All of which you can keep for use again!

How to make the udon noodle soup

Here are the simple steps to your new favourite dish!

Step 1: Slice the sugar snap peas, spring onions and chillies and thinly peel the carrots.

Step 2: Make some vegetable stock in a big saucepan on the hob and separate a few ladles to be mixed in with 1 tbsp miso paste in a separate bowl.

Step 3: Cook the udon noodles separately to the packet’s instructions.

Step 4: Add the chopped vegetables to the stock, but be careful not to overcook as you want them to retain some crunch!

Step 5: Add the separated miso stock back into the main pan, add a dessertspoon of rice wine vinegar and a lot of green chilli paste – but taste as you go!

Step 6: Dish up the drained noodles then add the veg on top, followed by the spicy soup broth.

Step 7: Garnish how you please with coriander, pickled ginger or chilli!

Did it beat the takeaway?

Angella and Douglas loved to order takeaways whilst cooking separate meals for their two daughters Eden and Erica.

But after trying the homemade udon noodle soup, Angella was convinced that it was better than ordering in!

In the episode, Angella said it was “so flavourful” and “100 times better” than the takeaway.
